It's the weekend! Let's take advantage of it and the summer ripe tomatoes. Whether you are having a garden party or just relaxing at home this simple recipe will be sure to make your taste buds happy.
The Main Ingredients
4 ripe tomatoes, finely chopped
1 small white onion, finely chopped
1⁄2cup cilantro leaf, chopped (add more to taste or preference!)
2 -3 jalapeno peppers, finely chopped (keep seeds for extra spice)
1 tablespoon lime juice (add more to taste)
Combine all ingredients, cover and refrigerate an hour or more.
Plate and serve. It is best fresh but can be used several days after it is made.
Eat with burritos, tacos, or chips. Even add 2 avocados to the mix and have fresh guacamole!
